Those days felt like the threshold of the season. Snow drops were giving way to crocuses on the little green strands of lawn on the way into the business park and visits to my mum’s were soundtracked by the sparrows in the hedges on her block. I love winter but I think spring, lusty spring, is my favourite time of year.
While this wretched weather might be making us all call into question the arrival of spring, the determined emergence of one of my all time favourite British springtime ingredients is reminding us that yes, April is here, and as cooks, it’s a VERY exciting time. The result was utterly delicious and I thought I should share the recipe with you here because it was so simple. Rhubarb is just coming into season and I just cannot get enough of cooking with it at the moment. It’s just one of my favourite all-time ingredients – I love the way it transforms with sugar into a sherbety, sour goo, and I’m so excited that we’ve inherited a crown of it down at the allotment.
